Served individual in its own black pan, Betanzos style, barely set in the center, golden and blistered at the edges where the egg met the heat, potato and onion giving just enough body without turning the whole thing into a cake. The stone wall behind the candle, the well worn bar, the quiet hum of Salesas at night, all of it is part of how the dish lands. Nacho and Sara built something here that feels like it was already there when they arrived, and this tortilla is the proof.
